In March 2014, with Arume, we won the “La Tapa l’any”, a contest organized by Estrella Damm in Cataluña. It was a beautiful moment that all came about quite casually. (PODRIA DECIR ‘It was a beautiful moment that came out of the blue’)
It started as a tapas contest in Barcelona’s Raval neighbourhood, little by little our votes came in and we made our way up to the qualifiers in Barcelona and Cataluña. I was then invited to Sitges, along with the other finalists, to cook in front of a panel of judges formed by industry professionals such as Miquel López Iturriaga, Jordi Herrera, Toni Masanés… My tapa was a reinterpretation of ‘pulpo á feira’ (a traditional Galician octopus dish); I took this traditional dish and added some contemporary flavours, some nuances of citrus, some spices, seaweed and other seafood essences.
